Roast tomatoes
Roasted Heirloom Tomatoes
Serves 2
6 heirloom tomatoes, mixed variety
1 tbsp rosemary
1 tsp sea salt flakes
½ tsp white pepper
1 tsp brown sugar
1/4 tsp sumac
¼ cup olive oil
Method:
1. Preheat the oven to 190C. Cut the tomatoes in half and place onto a roasting tray. Mix together the rosemary, salt, pepper, sumac and brown sugar, sprinkle over the tomatoes and drizzle with the olive oil.
2. Toss the tomatoes well to make sure they are evenly coated. Roast for approx. 35 – 40 minutes or until soft and golden. Remove from the oven and allow to cool.
3. To serve: serve tossed with fresh green leaves for a delicious salad.
