Carrot cake with berries
Serves 6-8
Ingredients
3/4 cup brown sugar
2/3 cup vegetable oil
2 eggs, extra large
180g self raising flour
Pinch of salt
1 tsp mixed spice
60g pecan nuts, chopped
11/2 cups grated carrot
1/2 cup crushed pineapple, well drained
For the icing
250g cream cheese at room temp
3/4 cup icing sugar
1 tbsp lemon juice
100g fresh berries
honey to drizzle
Method:
Preheat the oven to 160C. Grease and line the base of a loaf pan. In a bowl whisk together the sugar, oil and eggs. Sift together the flour, salt and spice.
Add the flour mixture, grated carrots, pecan nuts and crushed pineapple to the egg mixture, stir well to combine.
Pour mixture into the prepared tin and bake for 45-55 minutes or until a skewer inserted comes out clean.
Remove from he oven and allow to cool completely.
For the icing: beat together the cream cheese and icing sugar until smooth, add the lemon juice.
Spread the icing onto the cooled cake and top with berries and drizzle with hone.
To serve: serve sliced with extra berries.
