Pecan Nut Brownies

 

Pecan nut brownies with berry glaze

Ingredients

1 cup self-raising flour

1 tbsp cocoa powder

1.5 cups raw sugar

80g pecan nuts, chopped

Pinch of salt

125g dark chocolate, broken into pieces

180g butter

4 eggs, whisked

For the glaze

30g blueberries or blackberries, mashed with a fork

1/2-1 cup icing sugar ,sifted

Method

Preheat the oven to 170C.

In a large bowl, add the dry ingredients and stir well to combine, then add the eggs.

Place the chocolate and butter into a microwavable dish and microwave until melted, stir to combine, allow to cool a little then add to the flour mixture.

Pour mixture into a prepared 20cm x 20cm baking tin, bake for approx 40 minutes or until a skewer comes out clenn, allow to cool completely.

For the glaze

Mix together the berries and icing sugar and stir to combine.

To serve: spread the glaze over the brownies and slice into squares. Makes 16
