Sumac peaches & radicchio salad

A perfect winter salad

Griddled sumac peaches and radicchio salad

Serves 2

Ingredients

3 peaches

1 tbsp butter, melted

50g walnuts

2 tbsp sour cream

1/2 tsp sumac, ground

1 small head radicchio

olive oil to drizzle

Coriander leaves to garnish

Method

  1. Halve the peaches and remove the pips, brush with the melted butter. Heat a griddle pan and cook the peaches for 1-2 minutes or until slightly softened, remove and set aside to cool.

  2. Divide the leaves between 2 plates, add the peaches and walnuts, top with sour cream and sprinkle with sumac.

  3. To serve; drizzle with olive oil and serve immediately garnished with coriander leaves.
