Turmeric Oats and Persimmons

Warming Winter Breakfast - serves 2

Ingredients

21/1 cups rolled oats

pinch of salt

2 tsp turmeric

1/4 tsp cinnamon

3 tbsp honey

2 persimmons, sliced

1 cup coconut milk

shredded coconut

Method

  1. Place the oats, salt and spices into a small pot, add 11/2 cups of water. Bring to a simmer and then reduce the heat, cook over a gentle heat, stirring for 3-4 minutes, adding more water if the mixture is too thick.

  2. For the fruit: heat the honey in pan, add the persimmon slices and cook for 2 minutes or until softened.

  3. To serve: divide the oats between 2 bowls, top with the persimmon slices and honey. Serve with coconut milk and coconut.
